Peanut Butter Cupcakes With Chocolate Chips

  1. Combine first 9 ingredients in a large bowl, beat at low speed of electric mixer just until blended.
  2. Beat at high speed for 2 minutes.
  3. Spoon batter into greased muffin pans, filling 2/3 full.
  4. (I use cupcake liners).
  5. Sprinkle chocolate chips over each cupcake.
  6. Bake at 350 degrees for 18 to 20 minutes or until a wooden toothpick inserted in center comes out clean.
  7. Remove from pans and let cool completely on wire rack.
