Creamy Cheesy Broccoli
- 2 lb broccoli
- 1/2 tsp salt
- 1/4 cup margarine
- 2 1/4 cup extra sharp cheddar cheese, shredded off the block
- 1 tbsp arrowroot powder
- 1/4 cup margarine
- 14 oz can of evaporated milk
- In a pot add broccoli, margarine, and salt cover and cook till render
- Measure out a quarter cup of evaporated milk.
- Mix the arrowroot powder till no lumps are there just smooth.
- In another pot add the rest of the margarine and milk and heat.
- Shred the cheese.
- Add to milk in pot you will know when, not boiling, but when a film starts to form stir add most of the cheese.
- When its incorporated well add the rest of cheese stirring constantly.
- Add arrowroot mixture.
- It will thicken very quickly.
- Keep stirring constantly, till its your desired thickness.
- When its thick pour over broccoli.
- Stir and serve hope you enjoy!
