Chocolate Chunk Soda Bread
- 2 cups flour
- 12 cup chopped bittersweet chocolate or 12 cup miniature chocolate chip
- 14 cup unsweetened cocoa powder
- 12 tablespoon baking powder
- 2 teaspoons sugar
- 12 teaspoon salt
- 12 teaspoon baking soda
- 14 teaspoon cinnamon
- 1 cup buttermilk
- Preheat oven to 350F and spray a baking sheet with nonstick cooking spray.
- Stir together all ingredients except buttermilk in a medium bowl.
- Add buttermilk; blend with a fork until well mixed.
- Place dough on floured board and knead for 2 minutes or until smooth, using additional flour as needed.
- Shape dough into a 6-inch round and place on prepared baking sheet; let rest for 10 minutes.
- With a sharp knife, slash a cross on the top of the loaf.
- Bake for 35 to 40 minutes or until a knife inserted in the center comes out clean.
