Egg Muffins Under 120 Calories
- 8 eggs
- 1/2 cup small diced baby bella mushrooms
- 1/2 cup small diced orange bell peppers
- 1/2 cup corn
- 1 tablesspoon of garlic powder
- 1 Salt and pepper to taste
- 3/4 cup grated parmesan cheese
- Preheat oven to 375.
- Add eggs to a mixing bowl and beat.
- Add in veggies.
- Spray cupcake tins with non stick cooking spray generously.
- Using a ladle pour one scoop into each tin.
- Top each cup with a generous pinch of cheese, roughly 1 tablespoon each.
- Add a pinch of pepper to each to top it off.
- Bake for 18 to 20 minutes, or until muffins are set and are lightly golden.
- They will puff in the oven, but sink upon cooling.
- Allow muffins to cool in pan for about 10 minutes before removing.
