Banana Daiquiri
- 1 small ripe banana
- 1/4 c. Crushed ice
- 2 1/2 tbsp. light rum
- 2 tbsp. banana-flavored liqueur
- 1 1/2 tsp. Rose's Lime Juice
- 1 1/2 tsp. Simple Syrup*
- Cut a 2-inch piece from the stem end of the banana and reserve.
- Peel remainder and cut into chunks.
- In blender, combine remaining banana, ice, rum, liqueur, lime juice, and syrup; blend until smooth.
- Pour into decorative glass, garnish with reserved banana, and serve.
- To make Simple Syrup: In 1-quart saucepan, heat 1/2 cup water to boiling over high heat.
- Add 1 cup sugar and stir until sugar dissolves.
- Let cool 5 minutes.
- Store in airtight container, refrigerated, for up to 1 week.
- Makes 1 cup Simple Syrup.
