Brewed Sauerkraut

  1. Fry bacon in a 2 quart saucepan until crisp.
  2. Remove, drain, and set aside.
  3. Add onions to pan and saute'.
  4. Stir in sauerkraut, beer, sugar, caraway seeds, and pepper.
  5. Bring to a boil, cover, and simmer for 1 hour.
  6. Add carrots and simmer uncovered for an additional 20 minutes, until carrots are tender.
  7. Spoon into a serving bowl and garnish with bacon pieces.
