Brewed Sauerkraut
- 1 cup chopped onion
- 1 cup coarsely shredded carrot
- 1/2 tsp caraway seeds
- 2 tbsp packed brown sugar
- 1 pepper to taste
- 2 lb sauerkraut, rinsed and drained
- 1 (12 ounce) can beer
- 4 strips diced bacon
- Fry bacon in a 2 quart saucepan until crisp.
- Remove, drain, and set aside.
- Add onions to pan and saute'.
- Stir in sauerkraut, beer, sugar, caraway seeds, and pepper.
- Bring to a boil, cover, and simmer for 1 hour.
- Add carrots and simmer uncovered for an additional 20 minutes, until carrots are tender.
- Spoon into a serving bowl and garnish with bacon pieces.
