Shrimp Scampi
- 12 cup low sodium chicken broth
- 12 cup dry white wine
- 14 cup fresh lemon juice
- 14 cup fresh parsley, minced
- 14 teaspoon salt
- 14 teaspoon fresh ground pepper
- 4 teaspoons olive oil
- 1 14 lbs medium raw shrimp, peeled deveined (tails left on)
- 6 -8 garlic cloves, minced
- 4 lemon wedges (garnish)
- parsley, minced (garnish)
- In a medium saucepan, combine the broth, wine, lemon juice, the parsley, the salt and pepper and bring it to a boil.
- Boil uncovered until the sauce is reduced by half.
- Keep on back burner on low.
- In another large nonstick skillet, heat the oil.
- Saute the shrimp until just pink (about 2-3 minutes).
- Add the garlic and cook stirring constantly (about 30 seconds).
- Plate the shrimp and spoon the sauce over the shrimp.
- Serve garnished with the lemon wedges and sprinkled with a little parsley.
