Biscotti Di Greve In Chianti Recipe

  1. Preheat oven to 325 .
  2. Put the flour , sugar, baking soda, & salt in the bowl of a food processor with a steel blade.
  3. Pulse several times to mix.
  4. In a container with a pouring spout, mix together the 2 whole Large eggs, 1 egg yolk, vanilla & orange zest.
  5. Pour into the flour mix, stirring continuously till mix is not yet collected into a ball.
  6. Add in the nuts.
  7. Transfer the dough to a lightly floured surface & shape into tow or possibly three logs, each 3 inches wide.
  8. Put onto buttered baking sheets at least three inches apart.
  9. Brush with egg wash. Bake for 25 to 30 min till pale gold, Remove from oven & cold till comfortable sufficient to handle.
  10. Use a serrated knife to cut into 1= inch strips.
  11. Cut the strips into inch thick slices.
  12. Arrange them on the baking sheets, cut side down & return them to the oven to bake for another 12 min till pale golden brown.
