Candied Sweet Potatoes
- 5 -6 raw sweet potatoes
- 1 (16 ounce) can pineapple bits
- 12 cup honey
- 12 lemon, juice of
- 14 cup brown sugar
- 1 teaspoon nutmeg
- 2 teaspoons cinnamon
- salt
- 12 cup butter
- mini marshmallows
- Preheat oven to 350 degrees.
- Peel and cube sweet potatoes.
- In a medium saucepan boil Sweet potatoes until cooked.
- Drain all excess water.
- Mash boiled potatoes with butter, pineapple bits, lemon juice and honey; DO NOT add milk.
- In a medium bowl combine brown sugar, nutmeg, cinnamon, and a dash of salt; stir the dry mixture into the yams.
- Pour into a greased baking pan or casserole dish and bake for 30 minutes.
- Remove dish from oven, cover with mini marshmallows & dabs of butter.
- Return to oven until marshmallows are golden brown.
