Candied Sweet Potatoes

  1. Preheat oven to 350 degrees.
  2. Peel and cube sweet potatoes.
  3. In a medium saucepan boil Sweet potatoes until cooked.
  4. Drain all excess water.
  5. Mash boiled potatoes with butter, pineapple bits, lemon juice and honey; DO NOT add milk.
  6. In a medium bowl combine brown sugar, nutmeg, cinnamon, and a dash of salt; stir the dry mixture into the yams.
  7. Pour into a greased baking pan or casserole dish and bake for 30 minutes.
  8. Remove dish from oven, cover with mini marshmallows & dabs of butter.
  9. Return to oven until marshmallows are golden brown.
