Minted Pea Pasta With Sour Cream

  1. Bring a large pot of water to the boil.
  2. Cook pene for 10 mins til tender, drain.
  3. Meanwhile heat a non-stick frypan to high heat and spray with cooking oil.
  4. Add onion and garlic and cook for 3 mins till softerned.
  5. Add peas, stock and cook for 5-6 minutes Add zest and juice and season with salt and pepper.
  6. Add penne and stir to combine.
  7. Top with sour cream and Parmesan cheese if desired.
