Tomato-Feta Salad with Lime and Mint

  1. In a large bowl, toss the tomatoes with the onion, olive oil, lime zest, lime juice and garlic.
  2. Gently fold in the feta and mint.
  3. Season with salt and pepper and fold again.
  4. Serve right away.
