Deep South Syllabub

  1. Beat whipping cream until foamy; gradually add 3/4 cup sugar, beating until soft peaks form.
  2. Set aside.
  3. Beat egg whites (at room temperature) until foamy.
  4. Gradually add remaining sugar, 1 tablespoons at a time, beating until stiff peaks form.
  5. Add wine, beating well.
  6. Gently fold whipped cream mixture into beaten egg white mixture.
  7. Combine fruit; mix well.
  8. Spoon fruit in sherbet glasses; top with whipped cream mixture.
  9. Sprinkle with orange rind to garnish.
