Ground Pork, Bean Sprout, and Salted Konbu Tsukune Patties

  1. Roughly chop the raw bean sprouts.
  2. Mix the sauce ingredients.
  3. Add the ground meat, bean sprouts, and salted konbu powder to a bowl and knead thoroughly until it all sticks together.
  4. Divide into 8 equal portions, roll into balls and flatten, and coat with katakuriko.
  5. Steam-cook covered with a lid over medium heat for 3 minutes.
  6. Flip them over, and steam-cook for another 5 minutes covered with a lid.
  7. Keep an eye on them to make sure they don't burn.
  8. Remove the lid, turn off the heat, temporarily remove from the pan, and wipe the pan clean with a paper towel.
  9. A lot of water will come out since we are using bean sprouts.
  10. Return the patties to the pan with the prepared sauce, and turn to medium heat.
  11. Simmer for about 1-2 minutes.
  12. Done .
