Ground Pork, Bean Sprout, and Salted Konbu Tsukune Patties
- 300 grams Ground pork
- 200 grams Bean sprouts
- 20 grams Shio-kombu
- 1 tsp Kombu tea
- 1 Katakuriko
- 1 tbsp Soy sauce
- 1 tbsp Cooking sake
- 1 tbsp Mirin
- 1 tbsp Honey
- 2 tbsp Water
- 1 Vegetable oil
- Roughly chop the raw bean sprouts.
- Mix the sauce ingredients.
- Add the ground meat, bean sprouts, and salted konbu powder to a bowl and knead thoroughly until it all sticks together.
- Divide into 8 equal portions, roll into balls and flatten, and coat with katakuriko.
- Steam-cook covered with a lid over medium heat for 3 minutes.
- Flip them over, and steam-cook for another 5 minutes covered with a lid.
- Keep an eye on them to make sure they don't burn.
- Remove the lid, turn off the heat, temporarily remove from the pan, and wipe the pan clean with a paper towel.
- A lot of water will come out since we are using bean sprouts.
- Return the patties to the pan with the prepared sauce, and turn to medium heat.
- Simmer for about 1-2 minutes.
- Done .
