Light Chicken Pancakes

  1. In a food processor, add all the ingredients (except the butter) and pulse until completely combined.
  2. Form pancakes with your hands.
  3. Preheat a frying pan over medium heat.
  4. Melt butter.
  5. Cook the pancakes 5 minutes and each side, or until chicken is completely cooked.
  6. Note: You can serve this with a light yoghurt sauce.
  7. Mix plain yoghurt with spices, dry herbs, salt and pepper.
