Italian Style Sausage and Peppers
- 2 lbs Italian sausage (sweet or hot) or 2 lbs fresh garlic sausage
- 1 large onion, sliced
- 5 tablespoons oil (I use extra virgin olive oil)
- 2 lbs bell peppers (assorted colors red, green, orange or yellow)
- 1 12 cups ketchup
- 1 cup water
- salt and pepper
- 8 -10 Italian rolls
- Turn on oven to 350 degrees.
- Bake sausage for 1 hour.
- Cut into 8 or 10 pieces.
- Saute onion in 3 tablespoon of oil until light brown.
- add peppers and cook.
- stirring constantly for 5 minutes.
- Sprinkle remaining oil on peppers.
- while turning.
- Mix ketchup and water.
- add to peppers, mixing well.
- add salt and pepper.
- cover and simmer for 20 minutes or.
- until peppers are tender.
- add sausage to peppers.
- serve on warm Italian rolls.
