Really Rockin' Refrigerator Cookies
- 1 lb (4 sticks butter)
- 1 cup confectioners' sugar
- 1 tsp vanilla extract (I use extra)
- 3 cup all purpose flour
- 1 red and green sprinkles
- Cream the butter, sugar, and vanilla in a large mixing bowl.
- Add the flour, and mix well.
- Divide the dough into 4 equal parts, and form each portion into a log 1 inch in diameter.
- Roll 2 logs in the red sprinkles and 2 in the green sprinkles, pressing them onto the sides.
- Chill the logs for an hour.
- Preheat the oven to 350F.
- Cut the rolls into 1/2 inch thick slices, and place the slices on ungreased cookie sheets.
- Bake until the cookies are golden, 8 to 10 minutes.
- Cool the cookies on wire racks.
- *This recipe makes about 5 dozen cookies.
- *
- **You can freeze the logs until it's time to bake and slice them right from the freezer, but add 2 to 3 minutes to the baking time.
- **
- ***You can also roll these in different colored sprinkles to use for a different occasion other than Christmas.
