Spicy Soy Milk & Sesame Noodle Sauce

  1. Boil noodles (any kind you like), and rinse with cold water.
  2. Mix together all the ingredients except the ra-yu.
  3. Then add ra-yu (as much as you like).
  4. I like to add an ice cube to the dipping sauce.
  5. It keeps the sauce cool while it melts, thinning the sauce as you eat.
  6. On cold days, this is also delicious as a sauce for hot udon (or soba).

  8. To make a warm soup for the noodles: Dilute the mentsuyu with 1 part hot water and 2 parts heated soy milk.
  9. Top with ground sesame seeds and ra-yu.
