Ratatouille Salad
- Sliced eggplant
- Sliced green and yellow zucchini
- 6 Quartered red and green peppers
- 2 Quartered red onions
- 6 cups Kraft Sundried Tomato and Oregano Dressing
- mixed salad greens
- Kraft Shredded Parmesan
- HEAT grill.
- Meanwhile, cut up vegetables and lightly brush with dressing; reserve excess dressing.
- GRILL vegetables over medium-high heat.
- Grill 3 - 4 minutes on each side or until tender.
- REMOVE from heat.
- Cut peppers into smaller pieces if desired.
- Toss salad greens in reserved dressing.
- Arrange on serving plate with grilled vegetables.
- Garnish with Parmesan cheese.
