Ratatouille Salad

  1. HEAT grill.
  2. Meanwhile, cut up vegetables and lightly brush with dressing; reserve excess dressing.
  3. GRILL vegetables over medium-high heat.
  4. Grill 3 - 4 minutes on each side or until tender.
  5. REMOVE from heat.
  6. Cut peppers into smaller pieces if desired.
  7. Toss salad greens in reserved dressing.
  8. Arrange on serving plate with grilled vegetables.
  9. Garnish with Parmesan cheese.
