Jalapeno Chili
- 1/4 cup Olive Oil
- 2 cup Coarsely chopped, onions
- 1 lb Hot Italian Sausage, cut into 1 inch lengths
- 1 lb Sweet Italian Sausage, cut into 1 inch lengths
- 6 clove garlic, minced
- 2 lb ground beef chuck
- 2 red bell peppers, cored, seeded and diced
- 3 -35 oz cans plum tomatoes, drained
- 6 jalapenos, cored-seeded and diced
- 1 cup chopped flat leaf parsley
- 2 tbsp tomato paste
- 6 tbsp chili powder
- 3 tbsp ground cumin
- 2 tbsp dried oregano
- 1 tbsp dried basil
- 2 tsp salt
- 1/2 tbsp fennel seeds
- 2 tsp pepper
- 2 lb roma tomatoes, quartered
- 1 shredded jack cheese
- 1 sour cream
- 1 sliced scallions
- Preheat a large heavy skillet over medium heat, saute sausages till brown than drain
- Heat a dutch oven or heavy stockpot with oil over medium heat
- Add onions and garlic, cook 3-5 mins.
- Raise heat to med- high and crumble in ground chuck.
- cook till browned.
- add sausage, red peppers and jalapenos, cook 10 mins
- stir in canned tomatoes, parsley, tomato paste, all herbs and spices, cook 10 mins
- add fresh tomatoes, cook 10 mins.
- serve with jack cheese, sour cream & scallions
