Oven Baked Fish Sticks

  1. Preheat oven to 400 degrees F.
  2. In a shallow bowl, whisk together batter mix, and other spices.
  3. Set aside.
  4. In another shallow bowl, whisk together milk and vinegar to make a mock buttermilk.
  5. Spray Pam baking spray onto a heavy duty non-stick baking sheet.
  6. Slice cod fillet into 1-inch by 2-inch strips.
  7. Dip each fish stick into milk mixture, and transfer to the dry batter mix.
  8. Cover fish with batter mix and lay out onto the non stick baking sheet.
  9. Repeat until all fish sticks are battered.
  10. Spray all of the fish sticks one more time with Pam.
  11. Place in oven for 10 minutes.
  12. After 10 minutes, flip each fish stick over and bake an additional 6-7 minutes, or until golden brown.
  13. Serve immediately.
