Plum and Berry Conserves
- 8 cups lightly pitted pureed plums
- 6 cups sugar
- 1 cup liqueur (Pimm`s, Blackberry and Cranberry)
- 1 tablespoon bottled lemon juice
- 1 orange, Chopped meat and zest
- 1 cinnamon stick
- 1 cup dried cherries, chopped
- 1 cup dried cranberries, chopped
- 2 tablespoons minced crystallized ginger
- 1 teaspoon butter
- 1 pinch salt
- 2 ounces chopped pecans
- 2 ounces chopped walnuts
- Place all ingredients except nuts in a large pot.
- Bring to a boil stirring to dissolve sugar.
- Stir while cooking rapidly to almost the gel point.
- About 15 minutes of a rolling boil add nuts cook and stir for 5 more minutes.
- Pour into hot jars leaving 1/4 inch headspace.
- Process 10 minutes in a hot water bath.
- Cool at room temperature, check seals, and store for up to one year in your pantry.
- Chill after opening.
