Bleu Cheese Pasta

  1. Boil a pot of water for the spaghetti.
  2. When water boils add the noodles.
  3. Cook spaghetti according to package instructions for al dente.
  4. Reserve 1 cup of the pasta water then drain the noodles in a colander and set aside.
  5. In a large skillet over medium heat, melt 4 tablespoons of butter.
  6. Then add flour, stir and cook the flour for a minute or two.
  7. Then slowly add milk, stirring as you go.
  8. Season with salt.
  9. Whisk sauce into a smooth consistency.
  10. Add crumbled blue cheese and keep stirring until sauce is smooth.
  11. Add cooked pasta with the 1 cup of starchy water.
  12. Add the extra 2 tablespoons of butter and the Buffalo sauce.
  13. Mix everything together, place top on pan and turn heat to low.
  14. Let it simmer for about 5 minutes, or until pasta is finished.
  15. Plate it and top with fresh parsley.
