Bleu Cheese Pasta
- 1 pound Spaghetti Noodles
- 6 Tablespoons Butter
- 4 Tablespoons All-purpose Flour
- 2 cups Milk
- 5 ounces, weight Crumbled Bleu Cheese
- 1 Tablespoon Buffalo Sauce
- 1 bunch Chopped Parsley
- Boil a pot of water for the spaghetti.
- When water boils add the noodles.
- Cook spaghetti according to package instructions for al dente.
- Reserve 1 cup of the pasta water then drain the noodles in a colander and set aside.
- In a large skillet over medium heat, melt 4 tablespoons of butter.
- Then add flour, stir and cook the flour for a minute or two.
- Then slowly add milk, stirring as you go.
- Season with salt.
- Whisk sauce into a smooth consistency.
- Add crumbled blue cheese and keep stirring until sauce is smooth.
- Add cooked pasta with the 1 cup of starchy water.
- Add the extra 2 tablespoons of butter and the Buffalo sauce.
- Mix everything together, place top on pan and turn heat to low.
- Let it simmer for about 5 minutes, or until pasta is finished.
- Plate it and top with fresh parsley.
