Blackberry Sauced Fruit Cakes Recipe
- 1/2 c. Crushed vanilla wafers
- 2 Tbsp. Butter, melted
- 8 ounce Package cream cheese
- 1/2 c. Sugar
- 1 Tbsp. All-purpose flour
- 2 x Large eggs
- 3 Tbsp. Lowfat milk
- 1 x Recipe Blackberry sauce
- Preheat oven 350 degrees Fahrenheit.
- Combine vanilla wafers and butter.
- Divide mix among muffin c.. Press onto bottom to create a hard and even crust.
- In mixer bowl beat cream cheese, sugar, flour, vanilla till well combined.
- Add in Large eggs, beat till combined.
- Stir in lowfat milk.
- Divide mix among muffin c.. Bake about 20 min cold refrigerate20 min before spooning Blackberry sauce on them.
- Blackberry Sauce: In blender combine 1-1/2 c. loose packed Blackberries, 1/4 c. sugar, 1 tsp.
- lemon juice, and 1 tsp.
- Blackberry liqueur.
- Blend till smooth.
