Pork Chops with Rice & Beans

  1. Drain beans, reserving liquid.
  2. Pour reserved liquid into 1-qt.
  3. measuring cup.
  4. Add enough water to measure 3 cups.
  5. Heat 1 tsp.
  6. oil in large skillet on medium heat.
  7. Add 4 chops; cook 4 min.
  8. on each side or until done (145F).
  9. Remove from skillet; cover to keep warm.
  10. Repeat with remaining oil and chops.
  11. Add dressing, peppers, onions and garlic to same skillet; cook and stir 5 min.
  12. or until vegetables are crisp-tender.
  13. Add rice; cook and stir 3 min.
  14. Add measured liquid; stir.
  15. Bring to boil; cover.
  16. Simmer on medium-low heat 15 min.
  17. Stir in beans, raisins and cumin.
  18. Top with chops; cover.
  19. Cook 5 min.
  20. or until liquid is absorbed and rice is tender.
