Oven-Barbecued Cranberry Chicken
- 1 (2 to 3 lb.) broiler fryer, cut up and skinned
- 1/4 c. vegetable oil
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. chopped onion
- 1/4 c. chopped celery
- 1 c. whole-berry cranberry sauce
- 1/2 c. catsup
- 1 Tbsp. brown sugar
- 2 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. wine vinegar
- Brown chicken in oil.
- Cook onion and celery in oil until tender.
- Stir in cranberry sauce and remaining ingredients.
- Bring to a boil and pour over chicken that you have put in a baking dish. Bake at 325u0b0 for 1 hour.
- I do not use the oil; I use Pam.
- The last 20 to 30 minutes, I take chicken out and add to the sauce 1 to 2 boxes Rice-A-Roni long grain wild rice that I have already fixed like box says, but I leave the margarine out.
- I then lay chicken back on and finish cooking.
- I also use chicken breast.
