Mustard-Encrusted Broiled Salmon
- 4 Tablespoons Dijon Mustard
- 1 Tablespoon Dry White Or Red Wine
- 1 Tablespoon Olive Oil
- 1 whole 6-8 Oz. Size, Wild Caught Salmon Fillet
- Sea Salt And Pepper, To Taste
- Lemon Wedges (optional)
- In a small bowl, mix the mustard, wine, and oil until combined.
- Preheat the broil function in your oven.
- Line a rimmed baking sheet with aluminum foil and brush lightly with olive oil.
- Place salmon on baking sheet and sprinkle with sea salt and pepper.
- Put it into the oven and broil for 2 minutes.
- Remove the pan from the oven and spoon the mustard sauce over the fillets.
- Continue broiling until cooked through and golden brown, about 5 minutes longer.
- Transfer to a plate and serve with a few lemon wedges if youd like.
- I serve this with sauteed greens.
- Variations: Mix finely chopped fresh herbs like rosemary and thyme into mustard sauce.
- Mix 1-2 cloves of minced garlic into mustard sauce.
- Substitute wine with red or white wine vinegar or lemon juice.
