Beef Stuffed Peppers Recipe
- 6 lg. green peppers
- Boiling water
- 1 1/2 lbs. lean grnd beef
- 1/4 c. onion, finely minced
- 1/2 c. celery, minced
- 1/2 c. green pepper, minced
- 1/2 teaspoon salt
- 2 c. cooked rice
- Cut tops from peppers and remove membranes and seeds.
- Cover peppers with boiling water.
- Cook 10 min; drain.
- Brown grnd beef, onion, celery and green pepper in skillet.
- Add in salt and rice.
- Spoon mix into peppers.
- Place in baking dish and pour catsup over top to cover.
- Bake at 350 degrees for 45 min covered.
