Couscous Jambalaya

  1. In a large skillet, heat 1 tablespoon canola oil over medium-high heat.
  2. Add onions, bell pepper, sausage, and Cajun seasoning and cook about 5 minutes, until onions and peppers are softened and sausage is browned.
  3. Stir in tomatoes and their juices.
  4. Reduce heat to medium-low, cover, and simmer 7 minutes.
  5. Meanwhile, cook couscous according to package instructions.
  6. Add shrimp to skillet and cook about 3 minutes, until they're cooked through.
  7. Add couscous to skillet and stir to combine.
