Crockpot Chicken Tikka (Weightwatchers)
- 8 ounces boneless skinless chicken breasts, cut into strips
- 1 cup brown rice, uncooked
- 1 large onion, thinly sliced
- 4 garlic cloves, minced
- 2 jalapenos, seeded and diced
- 1 (28 ounce) can diced tomatoes
- 12 cup fat free Greek yogurt
- 1 tablespoon ginger, freshly grated
- 1 tablespoon garam masala
- 1 tablespoon cumin
- 1 teaspoon paprika
- 1 teaspoon allspice
- 1 teaspoon salt
- 12 teaspoon black pepper
- 14 cup fresh cilantro, finely chopped
- 1 lime, juice only
- In a large bowl, mix all ingredients except chicken, rice and cilantro.
- Stir well to combine.
- Lightly mist crock pot with non-fat cooking spray, and place chicken inside.
- Season with additional salt and pepper.
- Pour bowl of tomato mixture over top of chicken.
- Cook on low for about 6-8 hours or high for about 4 hours.
- Serve with brown rice, cooked.
- Serve over rice and top with fresh cilantro.
