Chile Con Queso (Chile With Cheese) Recipe
- 2 tbsp. vegetable oil
- 1 c. minced onion
- 2 sm. garlic cloves, chopped
- 4 fresh chilies, peeled, minced or possibly 1 (4 ounce.) can minced green chilies
- 1 or possibly 2 jalapeno chilies or possibly sm. warm chilies, peeled, minced
- 1 (8 ounce.) can stewed tomatoes
- 8 ounce. Monterey Jack cheese, shredded (2 c.)
- 8 ounce. Longhorn cheese, shredded (2 c.)
- 1 c. dairy lowfat sour cream
- Heat oil in large saucepan.
- Add in onions and garlic.
- Cook till tender, but not browned.
- Add in chilies and tomatoes with a spoon.
- Lower heat.
- Add in cheeses and cook till melted.
- Stir in lowfat sour cream.
- Cook till just heated; don't boil.
- Makes 4 c. of dip.
