Savory Stuffing

  1. In a medium saucepan, melt the butter and saute the onion, celery and mushrooms until tender, about 7 minutes.
  2. Add the quinoa, broth, bay leaf, poultry seasoning and marjoram.
  3. Cover, reduce heat to a simmer and cook for 10 minutes.
  4. Turn off heat and leave on the burner for 7 more minutes without removing the cover.
  5. Toss in the parsley and bacon (if using).
  6. Season with salt and pepper.
