Dilo's Chicken Corn Chowder
- 3 slices hickory smoked bacon
- 3 boneless skinless chicken thighs or 2 boneless skinless chicken breasts
- 2 medium sweet onions, chopped
- 3 carrots, chopped
- 2 medium potatoes, chopped
- 2 medium sweet potatoes, chopped
- 1 (15 ounce) can sweet corn (drained)
- 3 -5 cups milk (i use skim)
- 3 dashes ground cinnamon (the missing ingredient)
- salt and pepper
- in a large pot brown the bacon until crisp (I leave bacon grease for flavoring) and add the chunked chicken.
- After brown add onions and carrots and allow to simmer and steam for a few minutes.
- Add potatoes and corn, then enough milk to cover it all usually 3 or 4 cups.
- Add the cinnamon then salt and pepper to taste.
- Bring to boil for 5 minutes, turn down to simmer 20 minutes.
