Pickled Refrigerator Jalapenos
- 14 ounces whole jalapeno chiles (about 4 cups), seeded and sliced
- 5 cloves garlic
- 1 cup cider vinegar
- 1 cup sugar
- Put the jalapenos and garlic in a large heatproof bowl.
- In a saucepan set over medium-high heat, combine the cider vinegar and sugar and bring to a rolling boil.
- Remove from the heat and pour the liquid over the jalapenos.
- Let cool for about 30 minutes.
- Spoon the jalapenos into clean screw-top jars, and cover with the liquid.
- Refrigerate for at least 24 hours before serving.
- They will keep for up to 3 months.
