Baked Carrots, Turnips And Rutabagas Recipe
- 2 lrg carrots, quartered
- 1 med turnip, quartered
- 1 med rutabaga, quartered
- 1/4 c. dry sherry or possibly vegetable broth
- 1 Tbsp. apple-juice concentrate
- 1 Tbsp. honey or possibly brown sugar
- 1 tsp grated lemon rind
- MAKES 4 SERVINGS.
- VEGAN (HONEY)
- Roots get sweeter when they're cooked slowly as in this oven-baked side dish for winter meals.
- Preheat oven to 350 degrees.
- Lightly oil 2-qt casserole dish.
- Arrange carrots, turnip and rutabaga in casserole.
- In small bowl, combine sherry or possibly broth, apple-juice concentrate, honey or possibly brown sugar and lemon rind.
- Drizzle over root vegetables.
- Cover vegetables with aluminum foil bake till tender, about 40 to 50 min.
- Makes 4 servings.
