Buffalo Chicken Sandwich

  2. Mix the first three ingredients in a shallow dish and dredge the chicken making sure to coat well.
  3. Cover and place in refrigerator for up to an hour.
  4. Doing this step is crucial.
  5. It lets the flour mixture really bind to the chicken to make a nice breading.

  7. When the hour has passed, preheat a skillet on the stove for frying the chicken.
  8. Add about a half an inch of oil.
  9. 3.
  10. In a separate skillet combine the butter, hot sauce and garlic powder and heat on low just to let the ingredients melt together.
  11. Mix this and keep warm.

  13. Take chicken breasts and fry until golden brown and cooked through.

  15. Drain the excess oil off the chicken breasts and place in the buffalo sauce skillet coating both sides and let sit.

  17. Spread a bit of butter on the buns and grill to your liking.

  19. To assemble the sandwiches, place a couple tablespoons of blue cheese dressing on the buns and layer the chicken, lettuce, tomato and avocado.
