Pasta Salad
- 1 box tri-color pasta
- 2 medium carrots, cut in strips
- 1 green pepper, cut in strips
- 1 red pepper, cut in strips
- 1 medium zucchini, cut in strips
- 1 medium yellow squash, cut in strips
- 1 c. broccoli pieces
- 1/2 c. diced red onion
- mushrooms (if desired)
- garlic powder/salt
- 2 Tbsp. butter
- 1 tsp. basil
- salt and pepper (optional)
- Italian salad dressing
- Cook pasta as directed; drain.
- (Add a small amount of butter or oil to prevent sticking.)
- Saute vegetables in garlic powder and butter about 5 minutes or until crisp-tender.
- Add basil, salt and pepper.
- Stir into pasta.
- Add Italian dressing to taste. Toss well.
- Can sprinkle with Parmesan cheese, if desired.
