Warm Winter Slaw
- 4 c. coleslaw mix (with red and green cabbage and carrot)
- 13 c. dried cranberries
- 1/4 c. thinly sliced red onion strips
- 3 tbsp. cider or rice wine vinegar
- 2 tbsp. maple syrup
- 1/2 tsp. kosher salt
- 13 c. toasted walnuts
- Spray a large nonstick skillet with cooking spray and heat over medium heat.
- Add coleslaw mix, cranberries, and red onion.
- Cook 3 minutes, tossing mixture frequently, until it starts to soften.
- Stir in vinegar mixture and salt.
- Cook 1 minute longer, stirring, until evenly dressed.
- Stir in walnuts.
