Diabetic Chocolate Pudding Recipe
- 1/3 c. cocoa pwdr
- 3 tbsp. cornstarch
- 1/4 teaspoon salt
- 2 1/2 c. skim lowfat milk
- 12 packets (12 grams) EQUAL Sweetener
- 1 teaspoon vanilla extract
- Sift cocoa into medium saucepan to remove lumps, then fold in cornstarch and salt.
- Slowly stir in lowfat milk.
- Cook mix over medium heat, stirring constantly till it begins to boil and thicken.
- Turn heat to low and continue cooking and stirring for 3 min.
- Remove from heat and add in Equal and vanilla.
- Pour into custard c. and place a sheet of plastic wrap on surface of each pudding to prevent skin from forming.
- Chill.
- Serves: 6.
