Diabetic Chocolate Pudding Recipe

  1. Sift cocoa into medium saucepan to remove lumps, then fold in cornstarch and salt.
  2. Slowly stir in lowfat milk.
  3. Cook mix over medium heat, stirring constantly till it begins to boil and thicken.
  4. Turn heat to low and continue cooking and stirring for 3 min.
  5. Remove from heat and add in Equal and vanilla.
  6. Pour into custard c. and place a sheet of plastic wrap on surface of each pudding to prevent skin from forming.
  7. Chill.
  8. Serves: 6.
  9. Exchanges: 1 bread.
  10. Calories: 69.
