Christmas Cinnamon Spice Cookies
- 1 lb honey
- 1 12 cups sugar
- 3 eggs, beaten
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 12 teaspoon ground cloves
- 1 pinch ground nutmeg
- 1 pinch coriander
- 1 pinch ground ginger
- 1 pinch allspice
- 1 pinch cardamom
- 1 teaspoon fine white pepper
- 6 23 cups all-purpose flour
- 1 cup confectioners' sugar
- 3 -4 tablespoons water
- To make cookie dough, warm honey over low heat until liquid; pour into a large bowl.
- Stir in sugar, eggs, baking soda and all spices listed.
- Mix in flour gradually.
- Knead throughly to make a dough.
- Preheat oven to 375 degrees .
- Grease baking sheets or line with parchment paper.
- Form dough into small balls about 1" across and place on cookie sheets.
- Bake 10-15 minutes or until golden brown.
- Cool on a rack.
- To make frosting, blend confectioners' sugar and water in a small saucepan.
- Bring to a boil, stirring constantly.
- Coat cookies with hot frosting.
