Touch Of Orange Sweet Carrots
- 1 lb baby carrots
- 1 1/2 cup water
- 1/3 1/3 cup honey
- 1/3 cup molasses
- 1 tsp cinnamon
- 1 tsp whole nutmeg, zested
- 1/2 an orange worth of zested peel and squeezed juice
- In medium pot, boil 1 1/2 cups water.
- Add the carrots and cook till JUST tender enough to pierce with fork.
- Drain 1 cup worth of water, drain rest.
- Put the reserve water in pot.
- Add all ingredients and 1/4 cup butter.
- Boil then simmer 15 minutes in lowest heat, pot covered with fitted lid.
- Enjoy!
