Chicken-Quinoa Burgers with an Avocado-Yogurt Sauce

  1. Cook the quinoa in boiling water for about 15 minutes, until it pops into little spirals.
  2. Drain and set aside.
  3. In a large bowl, combine the chicken, cooked quinoa, red bell pepper, half the cilantro, chili powder, cumin, ground coriander, garlic salt, and a good pinch of salt and pepper.
  4. Thoroughly mix with your hands, and then form 4 little patties.
  5. You can chill these in the fridge if you want, for as long as you want, or go ahead and cook em!
  6. Heat the oil in a large skillet over medium-high.
  7. Add the patties and sear until browned on both sides and cooked all the way through, 1012 minutes total.
  8. Set aside.
  9. In a food processor, combine the avocado, yogurt, remaining cilantro, lime juice and a pinch of salt.
  10. Blitz blitz blitz until smooth like buttah.
  11. Taste it.
  12. Ah.
  13. Know.
  14. Lightly toast the onion buns brushed with olive oil and garlic salt.
  15. Smear a little of the avocado sauce on the bottom half of the onion bun.
  16. Top with a chicken-quinoa patty.
  17. Then a ton more avocado sauce.
  18. Then some crumbled cotija cheese.
  19. Then ask someone how to pronounce cotija.
  20. And then tell me.
  21. Maybe a little cilantro for garnish?
  22. Yez.
  23. Serve with sweet potato fries!
