Comforting Salty-Sweet Simmered Chicken Thighs, Sweet Potato, and Eggs

  1. Sprinkle salt, pepper and sake on the chicken, and rub in.
  2. Chop the sweet potato into bite-sized pieces, and soak in water.
  3. Pour a small amount of oil in a frying pan, and stir-fry the chicken.
  4. When it's lightly browned, add the sweet potato, and continue stir-frying until the sweet potato turns slightly yellow.
  5. Add water, all the flavoring ingredients and boiled eggs, then bring to a boil.
  6. Cover the pan with aluminium foil (right on top of the pan ingredients), and simmer slowly while stirring occasionally.
  7. When the sweet potato is cooked through, it's done.
