Carrot & Peanut Soup

  1. heat oil in a large saucepan and saute onion till soft and golden.
  2. add carrots and saute for 5mins.
  3. add cayenne, salt, stock, cover and cook for 20mins or until carrots are very soft.
  4. puree in food processor/blender and return to he pot.
  5. add peanut butter and whisk well.
  6. cook for 5mins.
  7. season to taste.
