Stuffed Baked Potatoes

  1. Wrap potatoes in foil and bake in a moderate oven 180C for 1 hour or until tender.
  2. Remove and cut a 2cm slice off the top of each potato.
  3. Scoop out half the flesh from each potato and place in a bowl along with the spring onion, capsicum, corn, cheese, salsa, butter and seasoning.
  4. Mix together until combined.
  5. Spoon mixture back into potatoes and spray with olive oil.
  6. Bake for a further 15-20 minutes or until golden.
  7. Serve with a dollop of sour cream and salad.
