Stuffed Baked Potatoes
- 4 large washed potatoes
- 3 spring onions, finely chopped
- 1/2 red capsicum, finely diced
- 1/3 cup corn kernels
- 1/2 cup grated KRAFT Tasty Cheese
- 1/3 cup roasted capsicum salsa
- 2 teaspoons butter
- salt and pepper, to taste
- olive oil spray
- 1/4 cup sour cream
- salad, to serve
- Wrap potatoes in foil and bake in a moderate oven 180C for 1 hour or until tender.
- Remove and cut a 2cm slice off the top of each potato.
- Scoop out half the flesh from each potato and place in a bowl along with the spring onion, capsicum, corn, cheese, salsa, butter and seasoning.
- Mix together until combined.
- Spoon mixture back into potatoes and spray with olive oil.
- Bake for a further 15-20 minutes or until golden.
- Serve with a dollop of sour cream and salad.
