Vegetable Relish Marinata
- 1 head cauliflower, cut in flowerets and sliced into bite sized pieces
- 3 carrots, pared and cut in strips
- 2 celery ribs, cut into thin bite sized pieces
- 1 green pepper, cut in strips
- 1 (4 ounce) jar pimentos, cut in strips
- 1 cup stuffed green olive, sliced in half
- 1 cup green beans, cut into bite sized pieces
- 34 cup white wine vinegar
- 34 cup water
- 12 cup olive oil
- 2 tablespoons sugar
- 1 teaspoon salt
- 14 teaspoon pepper
- 14 teaspoon oregano
- Combine all ingredients in a large saucepan.
- Bring to a boil, stirring occasionally.
- Reduce heat and simmer, covered for 8 - 10 minutes (vegetables will be tender-crisp).
- Cool in marinade/dressing and refrigerate for 24 hours, stirring occasionally.
- Serve cold as a salad or relish and enjoy!
