Salmon Pommes #SP5
- 2 lbs salmon fillets, cut into 4 pieces
- 1 (24 ounce) container Simply Potatoes Traditional Mashed Potatoes
- 2 bunches scallions
- 4 tablespoons freshly grated parmesan cheese
- Dice the scallions and mix with the mashed potatoes.
- Put the fish fillets on a baking pan that has been well oiled, skin side down.
- Divide the mashed potato mixture evenly between the 4 fillets and cover the top of the fillets with the mixture.
- Bake at 350 for about 30 minutes, or until the fish is cooked through (varies slightly due to the thickness of the fish).
- Turn the oven to broil and sprinkle the Parmesan cheese over the mashed potatoes.
- Broil for about 5 minutes, until cheese is melted and lightly browned.
- Serve immediately.
