South African Indian Soya Chutney
- 1 vegetable oil
- 1/2 medium white onion
- 1/2 tsp minced ginger and garlic
- 2 1/2 red tomatoes
- 3 soya viennas sliced
- 2 tsp salt
- 2 tsp masala
- Slice the onions thin.
- Pour as little oil as possible into a small pot but must cover the entire bottom with oil.
- Slice tomatoes thin.
- Add onions, salt and ginger garlic to oil.
- When onions are slightly browning stir in the tomatoes.
- Let tomatoes melt a bit then add masala.
- Defrost soya viennas in microwave and cut into bite size pieces.
- Add to tomato chutney and let simmer until tomatoes are melted.
- Can substitute the soya vienna with sausage, boiled egg or baked beans.
- Can also eat just the chutney in a hot dog or as a side to a meat dish.
