Irish Farmhouse Loaf

  1. Mix the flour, sugar, fruit, lemon rind, butter, baking powder and soda.
  2. Add the beaten egg and the buttermilk to make a nice soft dough; beat well and pour into a greased 2-pound loaf pan.
  3. Bake at 300F for 1 hour, or until it tests done with a skewer.
