Zaatar Roasted Cauliflower and Tahini Dip (Vegan)
- 1 head Cauliflower, Stem Removed And Cut Into Bite-sized Pieces
- 1 Tablespoon Zaatar Seasoning Blend
- 2 Tablespoons Olive Oil
- 1 whole Lemon
- 2 Tablespoons Sour Cream
- 2 Tablespoons Heavy Cream
- 1/4 cups Tahini Paste
- 1/2 teaspoons Salt
- Preheat the oven to 450 F. Arrange the cauliflower in a single layer on a parchment-lined or non-stick sprayed rimmed baking sheet.
- Sprinkle with the zaatar and drizzle with the olive oil.
- Roast the cauliflower for 15-20 minutes until browned in spots but not mushy.
- Meanwhile, make the dip.
- Zest the lemon and reserve the zest.
- Combine the sour cream, cream, tahini, juice of the lemon, and salt in a bowl.
- Stir until smooth then taste and adjust the seasonings to your preference.
- When the cauliflower is roasted, remove it from the oven and sprinkle with the reserved lemon zest.
- Serve with the tahini sauce for dipping or drizzling.
