Chili Beans With Bacon
- 1 12 lbs dried pink beans
- 1 large onion, chopped
- 4 garlic cloves, minced
- 12 lb bacon, diced
- 1 (14 1/2 ounce) can diced tomatoes
- 4 cups water
- 4 teaspoons ham bouillon granules
- 1 tablespoon chili powder
- 12 teaspoon cumin
- 12 teaspoon Mexican oregano
- 12 teaspoon salt
- 12 teaspoon sugar
- 12 teaspoon onion powder
- 12 teaspoon garlic powder
- 12 teaspoon cornmeal
- 14 teaspoon fresh ground pepper
- 18 teaspoon cayenne pepper
- Rinse and sort beans before adding to a pot of water and bringing to a boil.
- Boil for 2 minutes and then remove from heat.
- Let soak for 1 hour.
- Cook diced bacon in the bottom of a large soup pot.
- Saute onions and garlic in bacon fat.
- Add diced tomato, water and spices.
- Add soaked beans to pot.
- Bring to boil and reduce the heat to low.
- Simmer covered for 4 hours, or until beans are tender.
- Delicious!
